Among the delis, pizza parlors, and fast food restaurants there is a void: fast, healthy, fresh food. This restuarant would consist of a menu of organic and environmentally responsible food. Think the freshest produce, freshly grilled meats, and healthy breads. This place could even offer gluten-free and allergy sensitive menus. It could be a place similar to the Fresh to Order style of service.

It seems so obvious that a train station would be the very best place for take out food service. Just look at Penn Station & how busy all of the vendors are at all times. Image being able to call in your order while on the train for pick up before getting into the car. This could also apply to a small grocery store on premises.
I also think that it’s important to encourage businesses that are open in the evenings as well as early morning to serve the commuters.
